|No-fry chicken schnitzel|
Once again from Nourishing Friends I tweaked this tofu schnitzel by making it with chicken so my kids would actually eat it. Don't be scared by the ingredients. Everything is available at any health food store.
1 lb. firm tofu (I used boneless chicken breast)
1 cup whole-grain bread crumbs (I used Panko bread crumbs)
1/4 c nutritional yeast
1 tbsp sesame seeds
1 tbsp hemp seeds
1 tsp garlic powder
1/2 tsp basil
1/2 tsp oregano
1/2 tsp tumeric
1/2 tsp paprika
freshly ground pepper
1 garlic clove
1/4 c tamari
1 tbsp agave nectar
1 tsp toasted sesame oil
1 tsp minced fresh ginger
pinch of cayenne
Whisk the marinade ingredients together and add tofu or chicken pieces. Set aside.
Combine the bread crumbs, nutritional yeast, sesame and hemp seeds and seasonings in a flat-bottomed dish. Coat tofu or chicken and bake at 400 degrees (tofu for 15 minutes, chicken for 20 minutes).
